Make the Perfect Tiki-Inspired Coconut Cocktail
The bright, beachy libation created for our #SecretDiningSociety event in San Francisco is like “a little party in a glass”

Even if you can’t spend all summer on the beach, this coconut cocktail will transport you to soft sands and sparkling blue waters every time you take a sip.
Los Angeles-based bartender Rosie Ruiz, a Margarita of the Year finalist, took inspiration from classic tiki cocktails to create the recipe for Silky, Smooth, which debuted at our Secret Dining Society San Francisco event.
“Everyone loves a good tiki drink,” Ruiz says. “They’re fun, they taste good when you make them right and they pair well with food.”
The summery cocktail strikes a balance between herbaceous, thanks to a backbone of Roca Patrón Silver, and sweet, thanks to a coconut syrup made from toasted coconut and cane sugar. A garnish of a walnut shell filled with toasted coconut complements the concoction and, as Ruiz points out, will help cut through the spicy food we so often crave during the warmer months. In all, she says, it’s “a little party in a glass.”

Silky, Smooth
- 2 oz Roca Patrón Silver
- .5 oz house-made toasted coconut syrup*
- 6 dashes Miracle Mile Spiced Bitters
- 1 cup toasted coconut**
- 1 cup pure cane sugar
- 1 cup water
- 1 cup sweetened shredded coconut
- Ice:Yes
- Glass:Double Rocks
- Garnish:Hollowed walnut shell filled with toasted coconut
Add all the ingredients to a double rocks glass, fill with ice and stir. Garnish with a hollowed walnut shell filled with toasted coconut and serve.
*House-made Toasted Coconut Syrup
Place all the ingredients in a saucepan over medium heat. Stir until the sugar is dissolved. Remove from the heat and let sit for 20 minutes. Strain the coconut from the syrup and store in the refrigerator until use.
**Toasted Coconut
Preheat the oven to 350°. Place the shredded coconut on a flat baking sheet and transfer to the oven. Check the coconut every 3 minutes, stirring occasionally to avoid burning. Once the coconut is golden brown, remove from the oven and let cool.
