From top to bottom, the bartending performance Sudeera Fernando gave at the 2016 Patrón Perfectionists competition was nothing but perfect. From 27 stories up in the air at the signature bar of the Burj al Arab in Dubai, Sudeera created an elevated drink worthy of the Perfectionist title. The Jalisco Swizzle combines clean, crisp Patrón Silver with bright pineapple infusions, citrusy notes, and deep herbal and spicy flavors from bitters and basil leaves. Using every part of the pineapple from skin to pulp, his inspiration for the show-stopping drink came from Patrón’s commitment to sustainability.
Every sip was absolute perfection, Sudeera, congratulations! Now on to Jalisco for the final Perfectionists face-off!
- 1.75 oz Patrón Silver
- .75 oz Pineapple skin infused Noilly Prat dry vermouth
- 1 oz Grilled pineapple juice
- .5 oz Lemon juice
- .75 oz Oleo saccharum (left over pineapple pulp from juicing, lemona zest, cinnamon)
- + 3 Basil leaves
- + 2 Dashes homemade barrel aged chili bitters
Add Patrón Silver, pineapple skin infused Noilly Prat Dry Vermouth, grilled pineapple juice, lemon juice and oleo saccharum and build in julep tin.
