Ingredients

25 oz PATRÓN Reposado
25 oz BANKS 7 Golden Age Blend
44 oz Whole milk
25 oz Orange juice
17 oz Lemon juice
17 oz Purified water
1 Orange, peeled
5 tsp Oolong tea
4 tsp Fennel seeds
4 tsp Coriander seeds
2 cups Demerara sugar
+ Orange peel for garnish
750 ml PATRÓN Reposado
750 ml BANKS 7 Golden Age Blend
1320 ml Whole milk
750 ml Orange juice
510 ml Lemon juice
510 ml Purified water
1 Orange, peeled
5 tsp Oolong tea
4 tsp Fennel seeds
4 tsp Coriander seeds
2 cups Demerara sugar
+ Orange peel for garnish

Unless noted, drinks should be made one at a time.

How to Make

For the base:

  1. Combine fennel, coriander, orange peel, tea, sugar and water in a large pot and boil.
  2. Remove from heat and allow to cool overnight.
  3. Strain, add tequila, rum and orange juice.
  4. Set aside.

Breaking the milk:

  1. In large pot, bring milk to a boil.
  2. Remove and “break” the milk by adding lemon juice.

Assemble & serve:

  1. Immediately pour the broken milk mixture into the base and stir to combine.
  2. Pour the entire mixture into a large perforated container.
  3. Use a fine strainer to remove large pieces.
  4. Use a container lined with a damp cloth or fine strainer to remove the smaller pieces.
  5. Repeat, pouring the clarified milk punch back over the filter until liquid is clear.
  6. Pour into a mason jar, seal and refrigerate for up to 2 weeks.
