Sudeera Fernando‘s recent victory at the Patrón Perfectionists competition in The UAE is no surprise, given his philosophy when it comes to bartending: always aim for perfection and put a personal touch on every creation. Sustainability is also an important part of his craft, which was evident in the Jalisco Swizzle – a sweet and herbaceous cocktail that incorporated every element of a whole pineapple. In addition to the recent victory in Dubai, he’s won numerous other competitions, including being named Finalist in The World Class 2016 Mastering Fruits and Plant Challenge.
