The History of Agave-Based Liquor
We’ve previously explored the history of tequila, but now we’re delving into the centuries-old legacy of other agave-based liquors—drinks deeply rooted in Mexican heritage.
Originating from the heart of Mexico, the agave plant, a succulent native to the region, was discovered to have extraordinary properties perfect for creating elixirs. The ancient Aztecs and Mayans were the pioneers in fermenting the agave plant’s sap. Their divine drink known as pulque was revered for its celestial qualities and used in sacred ceremonies.
Throughout the centuries, people began to explore methods for producing agave distillates. These now time-honored traditions for creating agave spirits include the use of clay ovens to slowly roast the agave hearts before fermentation, and of the tahona, a majestic stone wheel that crushes the agave plant and extracts its nectar.
The art of crafting agave distillates has been lovingly preserved and passed down through generations. While modern techniques and aging methods have been introduced over the years, the spirit of agave-based liquor remains firmly rooted in tradition and artistry.

Sotol
While perhaps less well-known than tequila and mezcal, sotol possesses its own captivating allure. Sotol, originating from northern Mexico, is derived from the sotol or desert spoon plant and boasts a distinctive vegetal flavour, with grassy, earthy, herbal or even spicy undertones. Technically, the sotol plant isn’t classified as agave—it’s actually part of the asparagus family—but the spirit often gets roped into the category of agave-based liquors due to its similarities.
Raicilla
Raicilla hails from the Jalisco region, just like tequila. It has a similar distillation process and it’s usually made from two different types of agaves, lechuguilla and pata de mula, although it can be made from other agaves as well. But unlike tequila, raicilla is known to have a fruity, floral and especially sweet profile.
Bacanora
Bacanora is crafted from the distillation of agave yaquiana or pacifica. It is made mostly at the foothills of the Sierra Madre Occidental mountain range in Sonora, and often takes characteristics from that land, with a peppery or earthy flavour profile. Sometimes called “Mexican moonshine,” bacanora can be hard to find these days because its production was banned in Mexico for nearly 100 years—but it is slowly regaining popularity in Mexico.
